Recipes using koji

SHiO-KOJI and Ama-KOJI.

Soramame koji products are hand made in Australia, using the finest natural ingredients. Our products are made with non GMO rice koji, Australian organic brown rice, natural sea salt and purified water. They are free from alcohol, sugar, gluten, dairy and artificial additives. Store in refrigerator or freezer.

Using SHiO-KOJI instead of salt for any dishes. Good for Bruschetta, marinade, quick pickles and salad dressing etc! more recipes are available.

Recipes using koji

Tamari-koji flavoured fried brown rice

[Ingredients] serves 2

Vegetables
1/2 onion: Chop into fine pieces
1/4 broccoli: Separate into small bunches, cut the stem into this slices

Rice
300g cooked brown rice
1 tablespoon tamari-koji
1 tablespoon sesame oil
Pepper
[Method]

1. Heat up the pan and pour sesame oil. Stir fry onion until it gets soft and moist, then add broccoli. Take them out form the pan when they are cooked and replace into a plate.

2. Put brown rice into the same pan, stir fry until it gets separated into pieces, then put back cooked vegetables into the pan, season with tamari koji. Add some pepper at the end.

Recipes using koji

Tamari-koji marinated tofu grill

[Ingredients] serves 2

Marinated Tofu
300g hard tofu: Tear tofu with hands
2 tablespoon tamari-koji
2 teaspoon sesame oil

Garnish
Roasted sesame

[Method]

1. Mix all the ingredients in a bowl and leave them for 30 minutes.
2. Grill for 15 minutes until it begins to brown. Sprinkle with roasted sesame to garnish.

*You can replace “Tamari-koji” to “Shio-koji”, or use white fish or seafood instead of tofu for variation.

Recipes using koji

Shio-koji cultured vegetables

[ingredients] serves 4

Cultured Vegetables
300g Assortment of seasonal vegetables ( 2-3 kinds ): Cut into thin slices
1-2 teaspoon shio-koji

Weight
1 medium size plate
Fill up water in a small sized bowl

[Method]

1. Put vegetable and shio-koji in a large bowl. Gently mix through.
2. Place a plate smaller than the bowl over the vegatables, then place a smaller bowl filled with water on the plate as a weight. Leave them about 30 minutes to 1 hour until water comes out of vegetable.
3. Gently squeeze some water out of the vegetables by hand and serve.

* Add lemon juice, dried fruits or nuts for variation

Recipes using koji

Boiled vegetable with shio-koji dressing

[ingredient] serves 4

Boiled Vegetable
Assortment of seasonal vegetables ( 2-3 kinds )

Dressing
1 tablespoon shio-koji
1 tablespoon olive oil
1 tablespoon brown rice vinegar
1 tablespoon lemon juice

[Method]

1. Boil the vegetable – put 1 kind of vegetable into boiling water at a time, and take out after 2 minutes. Repeat this until all the vegetables are done.
2. Put all the dressing ingredients in a bowl, and mix them with whisk. Mix dressing with boiled vegetable

ama-koji recipes

Ama-koji jelly

[Ingredients] serve 2

Jelly
A.

200ml water
1 teaspoon agar agar flake
B.
100ml ama-koji
1 tablespoon soy milk
1/2 teaspoon lemon juice
1/2 teaspoon lemon zest

Syrup
1 tablespoon rice syrup
1 tablespoon water

To serve
seasonal fruits for topping

[Method]

1.  To make ama-koji jelly place ingredients A into a pot leave it for 30 minutes and bring it boil. Reduce heat and simmer for 10 minutes until the flakes are completely dissolved.
2.  Add ama-koji from ingredients B and cook for 5 minutes and add soy milk and mix.
3.  Remove the pot from the heat and add lemon juice.
4.  Pour the mixture into two cups and let it cool. Refrigerate to set.
5.  Mix the syrup ingredients and pour equally into the cups.

ama-koji recipes

Orange lassi with ama-koji

[ingredients] serve 4

Orange lassi 
300ml soy milk
225ml orange juice
1/4 tablespoon lemon juice
3 tablespoon ama-koji

To serve
orange peel
[Method]

1.  Place the ingredients for the orange lassi in a bowl and mix. Top with fresh orange peel and serve.

Oat créme pudding with ama-koji

[Ingredients] serve 2

Oats pudding
A.
50ml rolled oats
1/3 teaspoon agar agar flake
pinch of sea salt
150ml water
B.
50ml soymilk
6 tablespoon ama-koji

Sauce
1 tablespoon maple syrup
1 tablespoon water

Garnish
some nuts and seeds for topping

[Method]

1.  To make the pudding place all the ingredients from A into a pot and bring it to the boil.Lower the heat and cook for 5 minutes.
2.  Add the ingredients B and simmer for 2 minutes whilst constantly mixing.
3.  Pour the mixture into 2 cups and let it cool to set.
4.  Place the ingredients for the sauce in a bowl and mix. Pour into the cups.
5.  Roast ingredients for the garnish in a pan and place on the oats pudding.
